Roasted aubergines with feta, Figs Almond Honey Jam and mint

Ingredients

  • 2 large aubergines
  • 4 tbsp olive oil
  • Salt and pepper by tastek
  • 4 tbsp Callas Confiture Figs Almond Honey
  • 100g crumbled feta cheese
  • 1 handful finely chopped mint
  • Toasted almond flakes

Preparation

  • Preheat the oven to 200°C
  • Cut the aubergines in half and make a diamond pattern on the cut edges.
  • Brush the aubergines with olive oil, season with salt and pepper, and place them cut-side up on a baking tray lined with baking paper..
  • Roast the aubergines in the oven for 30-35 minutes, until soft and golden brown.
  • Let the aubergines cool slightly and cut into chunks.
  • Divide the roasted aubergine pieces over a serving dish and spoon the fig jam on top.
  • Crumble feta over the dish, garnish with fresh mint and add toasted almond flakes for extra crunch, if desired.
