Roasted aubergines with feta, Figs Almond Honey Jam and mint
Ingredients
2 large aubergines
4 tbsp olive oil
Salt and pepper by tastek
4 tbsp Callas Confiture Figs Almond Honey
100g crumbled feta cheese
1 handful finely chopped mint
Toasted almond flakes
Preparation
Preheat the oven to 200°C
Cut the aubergines in half and make a diamond pattern on the cut edges.
Brush the aubergines with olive oil, season with salt and pepper, and place them cut-side up on a baking tray lined with baking paper..
Roast the aubergines in the oven for 30-35 minutes, until soft and golden brown.
Let the aubergines cool slightly and cut into chunks.
Divide the roasted aubergine pieces over a serving dish and spoon the fig jam on top.
Crumble feta over the dish, garnish with fresh mint and add toasted almond flakes for extra crunch, if desired.
