Pizza with Brussels sprouts, caramelised onion and spicy Floral Honey

Ingredients

  • 1 pizza dough or crust
  • 150g brussels sprouts
  • 75g mozzarella cheese
  • 1 small red onion, thinly sliced
  • 1 tbsp + 1 tsp olive oil, divided
  • 1-2 teaspoon hot honey
  • 1 tsp balsamic vinegar
  • Salt and peper

 

For hot honey:

  • 4 tbsp Callas Flowerhoney
  • 1/4 tsp chili flakes

Preparation

  • Heat oven to 500°F (260 degrees).
  • Heat 1 tablespoon of the oil in a small skillet. Add sliced onion and cook over low heat, stirring, until onions are caramelized, about 10-15 minutes. Add vinegar to onions and stir to coat. Remove onions from the skillet and set aside.
  • Trim woody ends from brussels sprouts and slice from top to bottom. Add remaining 1 teaspoon oil to the skillet and cook brussels sprouts over medium heat for about 5 minutes. Season with salt and pepper.
  • Build the pizza. Stretch or roll pizza dough into a circle on a piece of baking paper.
  • Spread caramelized onions evenly over the dough. Top with half of the mozzarella, then the brussels sprouts, then the remaining mozzarella.
  • Bake the pizza for 8-10 minutes on a baking sheet, or until cheese is bubbly and crust is golden.
  • Remove pizza from the oven and drizzle with hot honey just before serving.

 

To make the hot Flowerhoney:

  • Add Callas Flowerhoney and chili flakes to a small saucepan.
  • Heat over low heat until just barely simmering, then remove from heat.
  • Store honey in an airtight container at room temperature.
