Mix the flower, the baking powder, the baking soda and the salt together in a bowl
In a separate bowl, mix the eggs, buttermilk, oil and vanilla extract together .
Add the flour to the bowl with the buttermilk and mix. Stop mixing once everything is nicely mixed. Mixing too long will make the pancakes sticky.
Heat your frying pan on a medium-high heat. Melt a lump of butter.
Use a ladle to pour a portion of batter into the pan. Bake the pancakes gently over a medium heat.
Make a nice stack with alternately pancakes and banana slices
Cover the stack with Banana-Chocolate jam
