Raspberry-Elderflower Royale

Ingredients

(for 1 glass):

  • 1 teaspoon Callas Intense Raspberry Jam
  • 15 ml elderflower syrup
  • 15 ml fresh lemon juice
  • 80 ml cold Darjeeling tea or a delicate white tea (light and aromatic)
  • 40 ml sparkling water or a refined premium tonic
  • Ice cubes
  • Optional: fresh raspberries and a mint leaf for garnish

Preparation

  • Dissolve the raspberry jam in the lemon juice and elderflower syrup. Stir well until smooth.
  • Add the cold tea and stir again.
  • Strain the mixture if desired to remove seeds (for a clean, clear presentation).
  • Fill a coupe or tumbler glass with ice and pour the mixture over it.
  • Top with a splash of sparkling water for a light fizz.
  • Garnish subtly — for example, with a raspberry on a golden skewer or a fresh mint leaf.
