Cooking Suggestion Gert De Mangeleer: Fennel Relish with Pineapple Dates Vanilla

Ingredients

  • Fennel
  • 1 Large onion
  • 50ml soft white wine vinegar
  • 250g Pineapple with Dates & Vanilla

Preparation

  1. Clean the fennel and onion and cut in small pieces
  2. Stew softly in butter during 10 minutes
  3. Deglaze with the wine vinegar
  4. Add 250g of Pineapple Dates Vanilla extra jam
  5. Let it thicken on a soft fire for another 10 minutes
  6. Serve with roasted quail or spring chicken but also perfect with pork roast of pheasant.
